Kalamata olives & feta cheese muffins
Ingredients:
- 2 cups plain flour
- 3 teaspoons baking powder
- 50 g butter, melted
- 1 egg
- 200 g feta, cut into 1cm cubes
- 1¼ cups milk
- 1 cup chopped, pitted Kalamata olives
- 1 teaspoon rosemary, chopped
Sift flour with baking powder into a large bowl. Make
a well in the center of dry ingredients and add butter,
milk, cheese, olives and rosemary to the dry ingredients.
Mix until just combined.
Three-quarter fill greased, deep muffin pans or mini
muffin pans. Bake at 190°C for 20-25 minutes or
until muffins spring back when lightly touched.

QUICK CHICK'N'antipasto
Stuff boneless chicken breasts under the skin with a
spoonfull of VITALITIES antipasto (any flavour - but
we like the little fire-burst of Chilli Olive Gourmet
antipasto). Bake them @ 180 C. for 35 minutes or until
juices run clear. Great served with salads.
